When you’re on the run it’s important to stay energized. On the way out of Denver I made the stop at the delicious Root Down restaurant in the Denver International Airport. The menu says that the breakfast burrito has Scrambled Eggs, Mozzarella, Chorizo, Roasted Squash, Dark Mole, Sour Cream & Pico de Gallo. It’s definitely unique and worth a review!

Tortilla

The Root Down breakfast burrito flaunts a beautiful tortilla. The tortilla has amazing grill marks and clearly has been toasted and wrapped well. No premature breaks occurred and the tortilla was able to contain the substantial contents of the burrito.

Textures

This BB contained a great blend of flavors and the textures of it worked together well. The eggs were soft and the rest of the contents blended nicely together. The roasted squash added a nice change of pace to the textures and provided a nice respite from the normal BB.

Flavors

The way Root Down does their BB is definitely unique and one of a kind. The dark mole combined with the roasted squash provided a new take on the Breakfast Burrito. I have to say I am a fan of how they changed things up and made this BB unique.

Use of Potatoes

The roasted squash was the substitute for regular potatoes. We here at Burritista like to see BB makers change up the normal use of potatoes. This added a nice change to the taste of the burrito and made for a pleasant burrito eating experience.

Impression

The Root Down BB provides a nice change to the normal Breakfast Burrito. With that said it could use a little refining but overall it’s worth a tasting.
